Cheesy Chicken Ramen Noodles is a little sumpin I just threw together as I was short on time. I’ve been thinking for a while about how to take an average boring pack of Ramen Noodles and spice them up. Turns out, there are a LOT of recipe ideas out there on the internet. Most of them being a stir fry Asian-type dishes, but you can find others.

With that said, I’m not much on the Chinese or Asian food aside from Sweet and Sour Chicken, but I LOVE Mexican food. Therefore, I went that route with a little kick, chicken, and cheese. This is a VERY basic and simple recipe that I just happened to have the ingredients for. By all means, feel free to change or add anything you like to make this dish your own.

Simple Incredients for Cheesy Chicken Ramen Noodles

One pack of Ramen Noodles (Serves 2-3, depending on appitite)

A can of your favorite Rotel, 10oz

One large 12.5oz or two small 5oz cans chicken breast (drained)

1/4 bag of your favorite shredded cheese

Putting the Cheesy Chicken Ramen Noodles Together

First, bring two cups of water to a boil as the package tells you. Once the water is boiling, add the noodles after you break the block up a bit. I usually break it up as much as I can without punchureing the flavor packet. Then I open the top, remove the packet, and bust up any large chunks remaining. Those boil for 3 minutes, keep them moving with a spoon every 20-30 seconds.

Next, kill the heat for just a moment. Add the seasoning packet, the Rotel, chicken, and cheese. If you had everything ready to go, (I didn’t and had to kill the heat), turning the burner off my not even be necessary. Turn the burner back on, or just keep it going if you didn’t turn it off. Mix everything up and let all the ingredients combine for 2-5 minutes, depending on if you had to turn the burner off.

Once everything is warm and the cheese is melted to your liking, kill the heat and take it off the burner. You might want to let it sit for at least a few minutes, it will be VERY hot right now.

I hope everyone likes and enjoys this very quick, simple, and easy recipe to spice up a pack of Ramen noodles. I was cooking my son and I, so if you have more mouths to feed, you may want to double the recipe. Considering my son doesn’t like green peppers or onion, (Rotel is packed with those) he said it was VERY good and requested it again.
