Incredible Chicken Crispers is a new concoction that I just ran across in a very weird way; we will get to that later. If you have ever had the Chicken Crispers at Chili’s, you know they are delicious. I just can’t seem to eat there without ordering either the Chicken Crispers or the Triple Dipper with the Chicken Crispers and the Southwestern Eggrolls, which are also delicious.
The journey to finding Incredible Chicken Crispers
This journey has a strange start. I was looking for a Long John Silvers fish batter. Granted, there are tons of copycat recipes on the internet, but no one has the ACTUAL recipe. Just like KFC’s chicken batter recipe, that is kept in two separate locations in a vault. The ingredients are even put together in separate locations and then combined later to form the actual batter. With that said, for some odd reason I decided to try this recipe out on chicken tenders and steak fingers one evening cooking for the family.
On to the recipe
Let’s jump into how to prepare this recipe. Look over the ingredients and make a trip to the grocery store for anything that’s missing from your cupboards.
- 2 cups flour
- 1/4 cup corn starch
- 2 teaspoons salt
- 2 teaspoons sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon black pepper
- 16 oz club soda
Mix all the dry ingredients in a large bowl. Remember, you will be adding your chicken tenders to this bowl, so make sure it’s big enough to hold everything. If your bowl has a lid slap it on top and shake it up like crazy, mix everything up. If you don’t have a lid just keep stirring with a spoon or a whisk. Once the dry stuff is thoroughly mixed, start adding the club soda and mix that in. This will take a few minutes to take the lumps out and make an actual runny batter.
On to cooking the Incredible Chicken Crispers
Start with your favorite cut of chicken. I pick that up at HEB or my local grocery store. If you chose to use chicken breast, cut that into strips to make tenders. Any which way you go, it’s all good. But fresh chicken is always the best vs any packaged item.
Get your skillet heating on the stove about 1/4 full of grease or oil. Don’t add too much oil! It will overflow when you add the chicken. That was a nightmare I had last Saturday. I added too much to the skillet and hot oil overflowed everywhere! That was a mess and a major fire hazard.
Go ahead and put all your prepared chicken in the bowl of batter one piece at a time and make sure everything is coated well while the skillet heats up. Once things are ready, start placing the chicken tenders into the skillet of hot oil one at a time. Try to space them out, else they will stick to each other. Flip them over and check them, you want to see a golden brown batter, but don’t burn them. Make sure both sides are golden brown in the long run. Remove. let cool, and get ready to eat!
We need condiments for our chicken tenders
The condiments can get a bit tricky here, depending on your preference. Personally, we like the honey mustard that Chili’s serves. Granted, you won’t always have access to their honey mustard, but Sweet Baby Ray’s has a honey mustard that is very good as well. For those that ain’t a honey mustard fan, you can serve this with barbecue sauce or cream gravy as well. That works great with fried tators and/or smashed tators.
Serve all that up and get ready to for the munching! There ain’t nothing better than fried chicken crispers with french fries or smashed tators, either one! Granted, this my not be the most healthiest thing to eat, but it’s better than anything that comes out of a box from your freezer! My grandparents lived into their 90’s eating every meal fried in grease, not oil. Just saying, the grease isn’t what’s killing us these days. It’s the lack of exercise and prepackaged garbage with added crap that is causing all the health problems these days.

Granted, these are great straight out of the pan but try this as well with the leftovers. Rap them up in foil and toss them in the refrigerator. In the next day or two, preheat your oven to 350, line a pan with nonstick spray, and heat those tenders back up for 15 minutes. This will make the batter crunchier and the chicken more tender. I’m going to bet money that Chili’s fries their Chicken Crispers beforehand, then bakes them before they hit your plate. I have no evidence, that’s just my guess judging from the results I got.
