Cast-Iron Skillet Broiled Cod Recipe

Cast-iron skillet broiled cod is my attempt at learning to cook healthy these days. As the years go by and we start getting older, most of us face health issues that must be dealt with. For me, that is high blood pressure. Therefore, the search for healthier foods. As we all have heard, there are great health benefits associated with seafood. With that said, considering I’m not a big fish eater, and my wife won’t touch fish, we will see how this experiment works out.

My biggest goal here is to add enough seasoning that we can’t tell the difference between fish and chicken. At this point in my life, I’m totally burnt out on chicken unless it’s fried, and that totally defeats the purpose. Even when you fry fish, it’s not nearly as bad for you as fried chicken, much less a chicken fried steak. With that said, this is (hopefully) only the first of my fish recipes that I will learn to enjoy and share with y’all.

INGREDIENTS  

  • 1 tsp black peppercorns or coarse ground pepper
  • 4 pieces cod fillets (about 1½ lbs)
  • ½ tsp dried thyme
  • ½ tsp salt
  • 2 tbsp olive oil
  • 1 onion thinly sliced
  • 1 bell pepper of your choice
  • 3 cloves garlic thinly sliced

INSTRUCTIONS 

  • Smash black peppercorns and set aside, skip is using coarse ground pepper
  • Sprinkle salt and thyme on both sides of the fish.

  • Preheat the oven to broil making sure the oven rack is about 6 inches from the heat source.
  • Heat a tablespoon of olive oil in a cast-iron skillet. Sauté the onion and bell pepper for 2 minutes. Add the garlic and continue cooking for an additional 30 seconds.

  • Transfer about half the veggies to a bowl.
  • Place the fish on top of the remaining veggies in the pan. Then spread the veggies in the bowl on top of the fish.
  • Sprinkle cracked black pepper and drizzle the rest of the olive oil over the fish and veggies.
  • Broil the fish in the preheated oven until the flesh turns opaque and white, and the fish flakes easily. This should take about 8 to 10 minutes depending on the thickness of the fish.

A meal is never complete without the side dishes that make it perfect, right!  I’m sure you’re not going to want to eat the fish all by its lonesome even with the peppers and onion, so we are going to need to add some side dishes to pair our fish with.  What sides pair well with fish?

  • Baked Potatoes
  • Risotto
  • Green Beans
  • Cauliflower
  • French Fries
  • Any Rice Variation
  • Cabbage

There is an endless list of possibilities here. It’s time for you to get in your kitchen (after a trip to the grocery store) and start experimenting! Try a few different sides and see what you like the best. Try different versions and variations of rice, potatoes, etc. No matter what it is, if you and your family like it, you did a good job. If not, just keep trying and changing things up. You will find the perfect winner everyone loves!!
